Ingredients
  

2 medium carrots, grated

1 large apple (preferably Granny Smith or Honeycrisp), cored and diced

1/4 cup raisins or dried cranberries

1/4 cup chopped walnuts or pecans

1/4 cup plain Greek yogurt

1 tablespoon honey or maple syrup

1 tablespoon lemon juice

1/2 teaspoon cinnamon

Pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

In a large mixing bowl, combine the grated carrots and diced apple.

    Add the raisins or dried cranberries and the chopped nuts to the bowl. Toss gently to mix.

      In a separate small bowl, whisk together the Greek yogurt, honey (or maple syrup), lemon juice, cinnamon, and a pinch of salt until smooth.

        Pour the dressing over the carrot-apple mixture and toss until everything is well coated.

          Adjust sweetness or acidity by adding more honey or lemon juice, if desired.

            Chill in the refrigerator for about 15-30 minutes to allow the flavors to meld.

              Serve in bowls with a garnish of fresh mint leaves, if using.
