8 oz penne pasta

2 chicken breasts, boneless and skinless

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper, to taste

3 ripe tomatoes, diced

1/4 cup fresh basil, chopped

2 cloves garlic, minced

1 tablespoon balsamic vinegar

1 cup mozzarella cheese, shredded

Parmesan cheese, for serving

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: Season the chicken breasts with Italian seasoning, salt, and pepper. In a skillet, heat the olive oil over medium heat. Add the chicken and cook for about 6-7 minutes per side, or until the chicken reaches an internal temperature of 165°F (75°C). Remove from the skillet and let rest.

      Make the Bruschetta Topping: In a medium bowl, combine the diced tomatoes, chopped basil, minced garlic, and balsamic vinegar. Season with salt and pepper to taste. Set aside.

        Slice the Chicken: Once the chicken has rested, slice it into thin strips.

          Combine Everything: In the skillet where the chicken was cooked, add the cooked penne pasta and the bruschetta mixture. Toss to combine over medium heat for about 2-3 minutes, allowing the flavors to meld together.

            Add Cheese: Stir in the shredded mozzarella cheese until melted and evenly distributed throughout the pasta.
