Broccoli Cheese Soup Recipe

4 cups fresh broccoli florets

1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable or chicken broth

2 cups shredded sharp cheddar cheese

1 cup milk or heavy cream

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon nutmeg (optional)

2 tablespoons all-purpose flour (optional, for thickening)

Croutons, for garnish (optional)

Instructions
 

Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add diced onions and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute until fragrant.

    Add Broccoli and Broth: Add the broccoli florets to the pot and pour in the broth. Bring the mixture to a boil, then reduce heat to a simmer. Cover and simmer for about 15 minutes, or until the broccoli is tender.

      Blend: Using an immersion blender, carefully puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup or use a regular blender in batches. Return the soup to the pot.

        Incorporate Cheese: Stir in the shredded cheddar cheese and let it melt on low heat, stirring occasionally. If you prefer a thicker consistency, whisk together the flour with a few tablespoons of the milk, then add it back to the pot.

          Add Cream & Season: Pour in the milk or heavy cream and sprinkle in salt, black pepper, and nutmeg (if using). Stir well and heat until warmed through but not boiling. Adjust seasoning to taste.

            Serve: Ladle the soup into bowls and top with croutons if desired. Enjoy hot!
