500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black peppercorns, coarsely ground

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

3 tablespoons vegetable oil, divided

4 cloves garlic, minced

1 inch ginger, grated

1 bell pepper, sliced (red or green)

1 onion, sliced

2 spring onions, chopped (for garnish)

1 teaspoon sesame oil

In a large mixing bowl, combine the chicken pieces, soy sauce, oyster sauce, and cornstarch. Mix well to coat the chicken evenly, then let it marinate for at least 30 minutes.

    Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.

      Add the marinated chicken to the skillet, spreading it out in a single layer. Let it sear for about 5 minutes until browned. Stir occasionally to ensure even cooking.

        Once the chicken is cooked through, remove it from the skillet and set aside.

          In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.

            Add the sliced onion and bell pepper to the skillet, stir-frying for 2-3 minutes until they are tender but still crisp.

              Return the chicken to the skillet along with the ground black pepper. Stir well to combine, ensuring the chicken and vegetables are coated evenly with the spices.

                Drizzle with sesame oil and adjust the salt if necessary. Cook everything together for another 2 minutes to blend the flavors.

                  Remove from heat and garnish with chopped spring onions before serving.
