8 ounces spaghetti or fettuccine

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

Salt and pepper to taste

3 large eggs

1 cup grated Parmesan cheese (plus more for serving)

1 cup heavy cream

4 cloves garlic, minced

1 cup frozen peas (thawed)

1 tablespoon fresh parsley, chopped (for garnish)

Freshly cracked black pepper, for serving

Instructions
 

Cook Pasta: In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package directions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken, season with salt and pepper, and sauté until cooked through and golden, about 6-8 minutes. Remove from heat and set aside.

      Create Carbonara Sauce: In a medium bowl, whisk together eggs, Parmesan cheese, and heavy cream until well combined. Set aside.
