For the Dumplings:

1 cup all-purpose flour

1/2 tsp salt

1/4 cup boiling water

1 tbsp vegetable oil

1/2 pound ground chicken or tofu

2 green onions, finely chopped

1 tsp fresh ginger, minced

1 tbsp soy sauce

1 tsp curry powder

1 tsp sesame oil

For the Soup:

1 tbsp vegetable oil

1 onion, chopped

3 cloves garlic, minced

1 tbsp curry powder

1 tsp ground turmeric

4 cups chicken or vegetable broth

1 can (14 oz) coconut milk

1 cup carrots, sliced

1 cup snap peas or green beans

Salt and pepper to taste

Fresh cilantro, for garnish

Prepare the Dumpling Dough: In a bowl, mix the all-purpose flour and salt. Gradually add boiling water and stir until combined. Add vegetable oil and knead the dough for about 5 minutes until smooth. Cover and let it rest for 30 minutes.

    Make the Dumpling Filling: In another bowl, combine the ground chicken or tofu with green onions, ginger, soy sauce, curry powder, and sesame oil. Mix thoroughly.

      Assemble the Dumplings: Roll out the dough on a floured surface and cut into 3-inch circles. Place a small spoonful of the filling in the center of each circle, then fold and seal the edges by pinching them together. Repeat until all dough and filling are used.
