Beef with Oyster Sauce

Ingredients
  

1 lb (450g) beef sirloin, thinly sliced against the grain

1 cup broccoli florets

1 bell pepper (red or green), sliced

1 medium onion, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

4 tablespoons oyster sauce

2 tablespoons soy sauce

1 tablespoon cornstarch

3 tablespoons vegetable oil (divided)

1 tablespoon sesame oil

Salt and pepper to taste

Cooked jasmine rice or noodles, for serving

Instructions
 

Marinate the Beef: In a medium bowl, combine sliced beef, 2 tablespoons of oyster sauce, 1 tablespoon of soy sauce, and cornstarch. Mix well, cover, and let it marinate for at least 15 minutes.

    Prepare the Vegetables: While the beef is marinating, wash and chop your vegetables—broccoli, bell pepper, and onion. Mince garlic and ginger.

      Heat the Oil: In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat.

        Cook the Beef: Once the oil is hot, add the marinated beef in a single layer. Sear for about 2-3 minutes or until browned. Be careful not to overcrowd the pan; you may need to do this in batches. Remove the cooked beef and set aside.

          Stir-Fry the Vegetables: In the same wok, add another tablespoon of vegetable oil. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant. Then, add the onion and bell pepper, stir-frying for about 2-3 minutes. Add the broccoli and continue to stir-fry for an additional 2-3 minutes until the vegetables are tender-crisp.

            Combine Everything: Return the cooked beef to the wok with the vegetables. Add the remaining 2 tablespoons of oyster sauce, 1 tablespoon of soy sauce, and sesame oil. Toss everything together, ensuring the beef and vegetables are well coated with the sauce. Cook for another minute or so.

              Season and Serve: Taste and add salt and pepper as needed. Serve hot over cooked jasmine rice or noodles.
