Bang Bang Chicken Bowls

Ingredients
  

1 lb (450g) chicken breast, sliced into bite-sized pieces

1 cup cornstarch

2 large eggs, beaten

1 cup panko breadcrumbs

Salt and pepper, to taste

2 cups cooked jasmine rice

1 cup cucumber, diced

1 cup shredded red cabbage

1/2 cup carrots, shredded

1 avocado, sliced

1/4 cup green onions, sliced

Sesame seeds, for garnish

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon Sriracha (adjust to taste)

1 teaspoon lime juice

Prepare the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, and lime juice until smooth. Set aside.

    Coat the Chicken: Season the sliced chicken with salt and pepper. Set up a breading station by placing the cornstarch in one bowl, the beaten eggs in another, and the panko breadcrumbs in a third bowl. Dredge each piece of chicken first in cornstarch, then dip it in the egg, and finally coat it with panko breadcrumbs.

      Fry the Chicken: In a large skillet, heat about 1/2 inch of oil over medium heat. Once the oil is hot (350°F or 175°C), carefully add the coated chicken pieces in batches. Fry until golden brown and crispy, about 4-5 minutes on each side. Remove the chicken and place it on a paper towel-lined plate to drain excess oil.

        Assemble the Bowls: In a serving bowl, start with a base of cooked jasmine rice. Top with crispy chicken, diced cucumber, shredded red cabbage, shredded carrots, and sliced avocado.

          Drizzle and Garnish: Generously drizzle the Bang Bang sauce over the top of the bowls. Sprinkle with sliced green onions and sesame seeds for an added crunch and flavor.
