1 lb (450g) boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional, for extra heat)

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

2 cups cooked jasmine rice (or rice of your choice)

1 cup shredded carrots

1 cup cucumber, thinly sliced

1 avocado, diced

2 green onions, chopped

Sesame seeds (for garnish)

Fresh cilantro (for garnish)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the buttermilk with the chicken thighs. Cover and refrigerate for at least 1 hour, or overnight for best results.

    Prepare the Breading: In a separate bowl, mix together flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper.

      Bread the Chicken: Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the seasoned flour mixture until fully coated. Set aside on a plate.

        Fry the Chicken: Heat oil in a large skillet over medium-high heat. Once hot, add the breaded chicken pieces to the skillet and cook for about 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F / 75°C). Remove from the skillet and let rest on a paper towel-lined plate to absorb excess oil.

          Make Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, and sriracha. Mix well until fully combined. Adjust the spice level by adding more sriracha if desired.

            Assemble the Bowls: In serving bowls, add a scoop of cooked jasmine rice as the base. Slice the fried chicken into strips and place on top of the rice.
