1 pound boneless, skinless chicken breasts

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

Oil for frying (vegetable or canola oil)

1 cup cooked jasmine rice or quinoa

1 cup mixed greens (spinach, arugula, or your choice)

1/2 cup shredded carrots

1/2 cup sliced cucumbers

1/4 cup sliced green onions

1 tablespoon sesame seeds

For the Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spiciness)

1 teaspoon lime juice

Salt, to taste

Prepare the Chicken: Start by cutting the chicken breasts into bite-sized pieces. In a mixing bowl, combine the garlic powder, onion powder, paprika, salt, and black pepper. Toss the chicken pieces in the spice mixture until evenly coated.

    Breading the Chicken: Set up a breading station with three separate bowls: one with flour, one with beaten eggs, and another with panko breadcrumbs. Dredge each piece of seasoned chicken first in the flour, then in the egg, and finally coat thoroughly with panko breadcrumbs.
