Ingredients

For the Chicken:

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup all-purpose flour

1/2 cup cornstarch

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper, to taste

1 large egg, beaten

Oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust to spice preference)

1 tsp lime juice

1/4 tsp garlic powder

For the Bowl Assembly:

2 cups cooked jasmine rice or quinoa

1 cup shredded lettuce

1/2 cup shredded carrots

1/2 cucumber, thinly sliced

1 avocado, sliced

Green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

Prepare the Chicken: In a bowl, combine flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper. In a separate bowl, whisk the beaten egg together. Dip the chicken pieces into the egg, then coat them thoroughly in the flour mixture. Let it sit for 10 minutes to allow the coating to adhere.

Fry the Chicken: In a deep skillet or frying pan, heat oil over medium-high heat. Fry the chicken pieces in batches for 5-7 minutes until golden brown and cooked through. Use a slotted spoon to transfer the chicken to a paper towel-lined plate to drain excess oil.

Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and garlic powder until well combined. Adjust spice levels by adding more sriracha if desired.

Assemble the Bowl: In serving bowls, start with a base of jasmine rice or quinoa. Top with a handful of shredded lettuce and shredded carrots. Add the fried chicken pieces generously over the top.

Garnish: Drizzle the Bang Bang sauce generously over the chicken, and then add slices of cucumber and avocado. Finish with a sprinkle of chopped green onions and sesame seeds for extra crunch.

Serve: Enjoy your Bang Bang Chicken Bowl immediately while warm, mixing everything together before digging in for a delightful flavor explosion!
