Ingredients
  

1 block (8 oz) feta cheese

2 cups cherry tomatoes, halved

3 cloves garlic, minced

½ teaspoon red pepper flakes (adjust to taste)

1 teaspoon dried oregano

¼ cup extra virgin olive oil

Salt and pepper to taste

12 oz pasta (penne or rigatoni works great)

1 cup fresh spinach, roughly chopped

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Preheat the oven to 400°F (200°C).

    Arrange the ingredients: In a 9x13 inch baking dish, place the block of feta cheese in the center. Surround it with halved cherry tomatoes and sprinkle minced garlic and red pepper flakes over the top.

      Season it right: Drizzle the olive oil over the feta and tomatoes, then sprinkle the dried oregano, salt, and pepper evenly.

        Bake: Place the dish in the preheated oven and bake for about 25-30 minutes, or until the feta is golden and soft, and the tomatoes have blistered and released their juices.

          Cook the pasta: During the last 10 minutes of baking, bring a large pot of salted water to a boil and cook your pasta according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.

            Combine and stir: Once the feta and tomatoes are done baking, remove the dish from the oven. Use a fork to mash the baked feta and mix it together with the tomatoes to create a creamy sauce. Add the cooked pasta and fresh spinach to the baking dish, stirring everything together. If the sauce is too thick, add a little of the reserved pasta water to reach the desired consistency.

              Garnish and serve: Serve hot, garnished with fresh basil leaves and a sprinkling of grated Parmesan cheese if desired.
