8 oz spaghetti or linguine

2 cups fresh spinach leaves, washed and chopped

2 tablespoons olive oil

2 cloves garlic, minced

Zest and juice of 1 lemon

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

Red pepper flakes (optional, for heat)

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti or linguine according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes.

        Combine Ingredients: Add the drained pasta to the skillet, along with the lemon zest and juice. Toss well to combine, adding reserved pasta water a little at a time to create a light sauce.

          Add Cheese & Seasoning: Stir in the Parmesan cheese, and season with salt, pepper, and red pepper flakes if using. Mix until everything is evenly coated.
