300g fresh udon noodles

3 tablespoons chili oil

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon ginger, grated

2 spring onions, finely sliced

100g snap peas, trimmed

1 red bell pepper, thinly sliced

2 teaspoons sesame seeds (for garnish)

Fresh cilantro (for garnish, optional)

Instructions
 

Boil the Noodles: Bring a large pot of water to a boil. Add fresh udon noodles and cook according to package instructions, usually about 3-4 minutes. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a large mixing bowl, combine the chili oil, soy sauce, sesame oil, rice vinegar, minced garlic, and grated ginger. Whisk well until combined and set aside.

      Stir-Fry the Veggies: In a large skillet or wok, heat a splash of water over medium-high heat. Add the snap peas and red bell pepper. Sauté for about 2-3 minutes until just tender but still crisp.

        Combine Noodles and Sauce: Add the cooked udon noodles directly into the skillet with the sautéed vegetables. Pour the prepared sauce over the noodles and stir well to combine. Toss everything together for another minute until heated through.
