200g fresh udon noodles

2 tablespoons chili oil (adjust to taste)

1 tablespoon soy sauce

1 teaspoon sesame oil

1 clove garlic, minced

1 teaspoon ginger, grated

2 green onions, sliced (white and green parts separated)

1 small carrot, julienned

1 cup bok choy, chopped (or any leafy green)

1 teaspoon sesame seeds (for garnish)

Fresh cilantro leaves (for garnish)

Salt and pepper to taste

Instructions
 

Cook the Udon Noodles: Bring a pot of water to a boil, add the udon noodles, and cook according to package instructions (usually about 3-4 minutes for fresh noodles). Drain and set aside.

    Prepare the Sauce: In a small bowl, combine the chili oil, soy sauce, and sesame oil. Mix well and set aside.

      Sauté Aromatics: In a large skillet or wok, heat a splash of oil over medium heat. Add the minced garlic, grated ginger, and the white parts of green onions. Sauté for 30 seconds until fragrant.

        Add Vegetables: Add the julienned carrot and chopped bok choy to the skillet. Stir-fry for about 2-3 minutes until they are tender but still crisp.
